Mexican Lasagna

I love checking out http://whatsgabycooking.com/ there is always something delicious looking. :)

Ingredients
  • cooking oil spray
  • 6 small corn tortillas cut into quarters
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup mild chunky salsa (I used a spicy one since I don't have kids)
  • 1 lb cooked shredded chicken breast
  • 4 oz cream cheese, cut into 1/2 inch cubes
  • 2 tbsp chopped fresh cilantro
  • 3 scallions, chopped
  • 1 tsp kosher salt
  • 2 cup shredded Mexican cheese
Instructions
  1. Preheat the oven to 350 degrees F and spray a baking sheet with oil.
  2. Place the quartered tortillas on the baking sheet and lightly spray with the oil.
  3. Bake for 5 minutes and then set aside.
  4. In a large bowl, whisk the egg. Add the milk, sour cream, salsa, chicken, cream cheese, cilantro, scallions and salt. Stir to combine.
  5. Spray a 7x11 baking dish with oil. Arrange half of the tortillas in the dish. Spread half of the chicken mixture on top of the tortillas, then sprinkle half of the cheese on top. Repeat this for a second layer.
  6. Bake, uncovered, for 35 minutes, or until the casserole is bubbling and the cheese is golden brown.

Chew M&M Oatmeal Cookies

These look irresistable. Oh my god.

Ingredients
  • 8 oz unsalted butter, softened
  • 1 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1 3/4 cups old-fashioned oats
  • 2 cups M&M's
Instructions
  1. Pre-heat oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.
  2. In a large mixer, combine the softened butter and brown sugar with a paddle attachment for 2 minutes.
  3. Add the eggs one at a time, followed by the vanilla extract.
  4. Add the flour, baking soda, sea salt and baking powder and slowly combine, making sure not to over-mix the batter.
  5. Add the oats and M&M's and combine.
  6. Refrigerate batter for 1 hour.
  7. Using a 1 inch scoop, scoop 12 cookies onto each parchment lined baking sheet. Transfer sheets into over and bake for 10-12 minutes until the cookies just slightly turn a golden brown color on the edges but are still soft and chewy in the middle. Remove from oven, transfer to cooling rack. Repeat process for remaining dough.

Maple, Pecan and Bacon Stuffed French Toast

Ingredients

  • 3/4 cup pecans
  • 1 pound sliced bacon cut into 1/2-inch slices
  • 1/2 cup half and half
  • 1/2 cup milk
  • 1/2 cup maple syrup
  • Salt
  • 12 slices bread, crusts removed
  • 6 eggs, beaten
  • 3/4 cup pecans

Procedures

  1. 1
    Heat a large stainless steel skillet over medium high heat, add pecans and toast until nuts are aromatic and beginning to brown, gently tossing the nut in the skillet while they toast, about 5 minutes. Remove from pan and when cool enough to handle coarsely chop.
  2. 2
    Add bacon to skillet and return to medium heat. Cook, stirring frequently, until brown and crisp, about 12 minutes. transfer to a paper towel-lined plate to drain.
  3. 3
    In a large bowl combine half and half, milk, maple syrup, and a pinch of salt and whisk to combine. Dip sliced bread in batter then arrange bread along bottom of an 8- by 11-inch baking dish. Scatter pecans and chopped bacon over the bread, then dip remaining bread in the batter and arrange on top. Re-whisk batter then pour remaining batter over the bread and press down gently. Let stuffed French toast sit in the fridge for an hour, or up to overnight.

    When ready to bake preheat the oven to 375°F and bake until top of French toast is cooked though and tops are browned, about 25 minutes. Slice and serve hot with maple syrup.

Tortellini Pasta Salad

Ingredients

  • 1 pound frozen tortellini
  • 1 red bell pepper, seeded and sliced into strips
  • 1 ear steamed or boiled corn, kernels sliced off the cob
  • 1 tomato, halved, seeds squeezed out, flesh sliced into strips
  • 1/2 medium cucumber, halved lengthwise, seeds scooped out, sliced into strips
  • 1/2 small red onion, diced or thinly sliced
  • 1/3 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2/3 cup canola or olive oil or a combination
  • salt and pepper to taste
  • crumbled goat cheese to garnish

Procedures

  1. 1
    Bring a medium saucepan of water to boil. Add the tortellini and cook according to package directions, usually until they float. Drain, rinse, and allow to cool while preparing the other ingredients.
  2. 2
    In a small food processor (or whisk by hand in a large serving bowl), combine the vinegar and Dijon mustard. Process for 15 seconds until creamy, or whisk vigorously. Add the oil while the food processor is running to create a smooth emulsion, or dribble slowly into the bowl while whisking constantly. Season to taste with salt and pepper.

    Combine the vegetables and dressing in a salad bowl. Add the tortellini and toss gently to coat. Season to taste, and serve with goat cheese crumbled on top.

Peeps Krispy Treats

I've actually made these before, they are fun :)

Ingredients

  • 3 tablespoons butter
  • 35 Peeps
  • 6 cups Rice Krispies cereal

Procedures

  1. 1
    In large pot, melt butter over low heat. Add Peeps and stir until completely melted. If using different colors, melt in separate color sections within the pot. Do not mix colors until Step 2. Remove pot from heat once butter is melted.

    Add Rice Krispies cereal. Stir until well coated.
  3. 3
    Evenly press mixture into 13 x 9 x 1 1/2-inch pan coated with cooking spray. Cool completely before cutting into desired shapes. Store in an airtight container.

Top Ramen Chicken Stir Fry

This is more like what I am cooking for dinner. College student dinners ftw...



Top Ramen Chicken Stir fry
Cut up about 1 pound of chicken breasts in small chunks and fry, boil or steam
Boil about 4 packs of the oriental flavored Top Ramen noodles
Add frozen or fresh vegetables to boiling noodles, do not use can vegetables because they will be very mushy after cooking them into the noodles. Drain noodles when done.
Combined chicken, vegetables and noodles in a big skillet, then add the Top Ramen seasoning packets. Add a half cup of water and cook on medium low, once water has boiled out make a space creating a bare space in the skillet to add a tbsp of oil, then add 2 eggs to scramble in that space. Once the eggs are scrambled, mix them with the rest of the ingredients in the skillet.
Add desired amount of pepper, salt and soy sauce
You can use just one or any combinations of the following vegetables and the recipe will be very tasteful.
Broccoli, Carrots, Cabbage, Peas, Onions, Pea pods, Green, onions and Corn
This dish is easy to make and the ingredients cost less than $12 for a family of 4 if you are only adding about 2 vegetables.

Greek Yogurt Cheesecake


Ingredients
  • for crust
  • 1 stick cold butter, cut into small chunks
  • 1.5 cups flour
  • 1/4 tsp salt
  • 2 T sugar
  • zest of 1 lemon
  • 1 egg yolk
  • 2 T cold water
  • for cheesecake
  • 2 cups whole milk or 2% Greek yogurt (not non-fat)
  • 2/3 cup sugar
  • pinch of salt
  • 2 eggs
  • 1 vanilla bean (seeds scraped out) or 2 tsp vanilla extract
  • 1 T cornstarch

Instructions
  1. Make the crust first. Spray a 10-inch springform pan with cooking spray and set
  2. aside. In a large bowl, mix together the flour, sugar, lemon zest and salt. Cut in the
  3. butter and blend in with your fingers until mixture resembles cornmeal. Add egg
  4. yolk and cold water. Mix until dough comes together to form a shaggy ball (dough
  5. may be dry). Cover in plastic wrap and let chill for half an hour.
  6. Preheat oven to 375.
  7. Roll out dough to same diameter as pan. You can do this easy by rolling out and
  8. placing the bottom of the springform pan on top and gently cutting around the pan
  9. with a dull knife. Place dough circle at the bottom of the pan.
  10. Place tin foil on top of the dough circle and cover with dried beans or rice to weigh
  11. down. Bake for 15 minutes then take off rice/bean/tin foil and prick all over crust
  12. with a fork. Return to oven and bake for another 15 minutes, or until golden.
  13. Meanwhile, make the filling. In a blender or food processor, combine the eggs, sugar,
  14. yogurt and vanilla. Blend until smooth then add cornstarch and pinch of salt and
  15. blend again. Pour filling into hot crust, lower oven temperature to 350 and bake for
  16. 35 minutes.
  17. When the cheesecake is done, it will still be jiggly in the center but will have
  18. a “done” look to it. The edges of the cake will start to pull away from the sides of the
  19. pan. Make sure you don’t overbake.
  20. Let cool then chill for 2-3 hours in the fridge before releasing springform. Arrange
  21. fruit of your choice over top of the cooled cheesecake. Enjoy!

BBQ Chicken Quinoa Salad

I recently discovered quinoa and I love it! This recipe looks awesome!



Ingredients
  • 1 cup cooked quinoa
  • 1/2 cup corn
  • 1/2 cup black beans, rinsed and drained
  • 1 cup shredded BBQ chicken
  • 1 avocado, chopped
  • 2 tbsp White Cheddar cheese, shredded
  • 2-4 tbsp BBQ sauce
  • 2 scallions, chopped
  • cilantro for garnish
Instructions
  1. In a large bowl, toss together the quinoa, corn, black beans, chicken and avocado. Season with salt and pepper
  2. Transfer mixture onto a bowl and top with shredded cheese, BBQ sauce, scallions and cilantro.
  3. Serve warm or at room temperature
Notes
*Note: this recipe calls for already cooked chicken so plan ahead! I prefer tocook my chicken in the crockpot, using 6 chicken thigh, 1 white onion sliced and 1/2 cup of BBQ sauce. I cook on low for about 6-7 hours and then shred and refrigerate for later.

Slutty Blondie Brownies

Definitely worth trying!

Ingredients
    For the Brownie layer:
  • 1/2 cup butter
  • 1 cup dark brown sugar
  • 2 tsp of vanilla
  • 1 egg
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/8 tsp of baking soda
  • 1/2 cup cup white chocolate chips
  • For the Oreo layer:
  • 1 package of Golden Oreos
  • For the Cookie Dough layer:
  • 1/2 cup unsalted butter (at room temp)
  • 1/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cup AP flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
Instructions
    For the Brownie layer:
  1. In a microwave safe bowl melt the butter and transfer into a mixing bowl. Add the brown sugar and whisk to combine. Add the vanilla and egg and continue to whisk until totally incorporated.
  2. In another bowl mix together the dry ingredients, flour, baking powder, salt, and baking soda.
  3. Slowly add the dry ingredients to the wet ingredients until fully combined. Stir in the white chocolate and set the batter aside
  4. For the Cookie Dough layer:
  5. Cream together the butter and sugars in a mixer. Add the egg and vanilla, making sure to scrape down the sides of the mixing bowl. Add the flour, salt, baking soda and baking powder and mix on low until everything is incorporated. Set aside.
  6. Assembly:
  7. Pre-heat the oven to 350 degrees.
  8. Line the bottom of a 9x9 baking pan with tin foil and then spray the tin foil with a layer of baking spray.
  9. Layer the cookie dough on the bottom of a 9x9 baking pan, pressing down to form the bottom of the slutty brownies.
  10. Layer as many oreos that will fit on top of the cookie dough. No need to overlap. One single layer will do.
  11. Since the blondie brownie batter is thick, carefully press the brownie batter on top of the oreo layer and make sure it's even on top.
  12. Bake for 30-35 minutes. Test with a knife to see if the center is done. If the knife comes out clean, let the brownies rest before serving. If the knife comes out with batter still on it, allow the brownies to bake about 5 minutes more.
  13. Serve with ice cream if desired :)

Strawberry Basil Lemonade

I will definitely be trying this soon!


Ingredients:

10 lemons, juiced, approx 1 cup of lemon juice

3/4 cup super fine sugar
4 cups water
8-10 strawberries, hulled
1/3 cup fresh basil
1/2 cup vodka (optional)

Directions:
Prep time: 10 min
Total time: 15 min
Juice the lemons and transfer the juice into a large pitcher. Add the sugar and the water and stir to combine and dissolve the sugar. Add the strawberries and basil. Using an immersion blender, blend the mixture for about 20 seconds just until the mixture turns pink and the basil is finely chopped. Add alcohol if desired. Serve with lots of crushed ice and go sit out by the pool and enjoy!

Grilled Guacamole

Wow this looks amazing!

here’s the step by step for Grilled Guacamole:
You need to prepare either your indoor or outdoor grill. Seeing as how it’s winter in Los Angeles and I freeze outside when it’s anything less than 50 degrees, I opted for my indoor grill. Place the avocados on the grill and let them get some black marks on the bottom.

Once the avocados have some grill marks, throw a few slices of red onion on the grill to char.

Next up, let’s grill some tomato quarters!
Once we’ve got everything grilled and set aside, place the avocado into a bowl and give it a quick mash.
Next, grate some garlic over the avocado.
Be sure to get all that fabulous garlic from the bottom side of your grater.
Next, juice a lime or two over the avocado.
Add the chopped red onion.
And then the tomatoes!
Throw in some chopped cilantro. Feel free to toss in some chopped chives if you want, too! They’re the best!
Season the guac with some salt and a few turns of freshly cracked black pepper.
And serve it up with some of your favorite chips!

I did my own version of this and made it into an ice cream cake, which was delicious! Definitely want to try out the original recipe someday!

Ingredients
    For the Brownie layer:
  • 10 tbsp unsalted butter
  • 1 1/4 cups white sugar
  • 3/4 cup cocoa powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup AP flour
  • For the Oreo layer:
  • 1 package of Oreo (regular stuffed or double stuffed)
  • For the Cookie Dough layer:
  • 1/2 cup unsalted butter (at room temp)
  • 1/4 cup brown sugar
  • 3/4 cup white sugar
  • 1 egg
  • 1 1/4 tsp vanilla extract
  • 1 1/4 cups AP flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup semi-sweet chocolate chips

Instructions
  1. For the Brownie layer:
  2. In a medium sauce pan, melt the butter over medium high heat. Add the sugar and cocoa powder once the butter is melted. Whisk to combine and remove from heat. Add the salt, vanilla and eggs and continuously whisk until the eggs are combined. Add the flour and continue to mix. Set batter aside.

White Wine Cooler

Ingredients

  • 1 orange
  • 1 (750 ml) bottle chilled white wine, such as Riesling
  • 1 (15-ounce) can sliced peaches in heavy syrup
  • 1/2 cup orange flavored liqueur (recommended: Cointreau)
  • 1/2 cup orange juice
  • 1/4 cup sugar

Directions

Slice orange and set aside. Add wine, peaches and their syrup, liqueur, orange juice, and sugar to a large pitcher, and stir to combine. Add orange slices to pitcher. Cover tightly and refrigerate for 1 hour. Pour into 6 wine glasses and serve immediately.

(I added two cups of strawberries and one cup of ginger ale and it turned out delicious! I also used 1/4 cup each of peach schnapps and orange vodka in substitution of the orange liqueur)

Steak Fajitas

13. Successfully move to So. Cal if accepted to Cal Poly Pomona!
14. Be more flexible in my relationship with Barrington.

Steak Fajitas Recipe

  • Prep time: 1 hour, 10 minutes
  • Cook time: 15 minutes

Ingredients

  • 1 Tbsp vegetable oil
  • 1 lb of flank steak, skirt steak or carne asada
  • 1 large yellow onion, peeled and sliced with the grain, not against the grain as one would normally slice an onion. Slice first in half, and then slice off sections a half inch wide at widest point.
  • 2-3 bell peppers of various colors, stemmed, seeded, de-ribbed, sliced lengthwise into strips
  • Salt

Marinade:

  • Juice of 1 lime
  • 2 Tablespoons of olive oil
  • 2 cloves garlic, peeled, minced
  • 1/2 teaspoon ground cumin
  • 1/2 fresh Jalapeño pepper, seeded, ribs removed, finely chopped (be careful not to touch your eyes or anywhere near your eyes after handling a Jalapeño pepper!)
  • 1/4 cup chopped fresh cilantro, including stems

Method

1 Mix all marinade ingredients. Coat the steak with the marinade and let it sit at room temperature for an hour, or longer in the fridge. Before you cook the meat, wipe off most of the marinade and sprinkle the steak with salt.

2 Set a large cast iron pan or griddle over high heat and let this heat up for 1-2 minutes. Add the tablespoon of oil to the pan and let this heat up for 1 minute. Add the steak, frying on each side for 3 minutes, or to desired doneness. 3 minutes per side will yield approximately medium rare doneness for an average cut of flank steak. Carne asada and skirt steak will need less time. If the pan starts to smoke too much, reduce the heat to medium-high. You want the steak browned, not burned. Remove from pan and let sit, tented with foil, for 5 minutes.

3 Cook the vegetables while the meat is resting. Add a little more oil to the pan if necessary, then add the onions and bell peppers. Let these sear for 1 minute before stirring, then stir every 90 seconds or so as the veggies sear. Cook for 5-6 minutes total.

4 Slice the meat against the grain into thin slices. If you slice the meat at an angle, you will be able to get your slices pretty thin. These cuts of steak are flavorful but can be a little tough, so thin slices will really help make it easier to eat.

5 Serve immediately with shredded cheese, salsa, shredded iceberg lettuce, sour cream, guacamole and warm flour tortillas. (Hint for warming tortillas - put in microwave over a paper towel for 20 seconds on high heat.)

Yield: Serves 4.

Biscuit Filled Apples

2 tbsps brown sugar
1 tsp cinnamon
4 apples (empire, golden delicious, or macintosh)


1 cup biscuit mix
1/3 cup milk (skim 2 low fat)
1Preheat oven to 350 degrees F (180C).

2In a small bowl, combine sugar and cinnamon.

3Core apples, and widen opening at top to accommodate biscuit.

4Rub insides and tops of apples generously with sugar-cinnamon mixture.

5Prepare biscuit dough per instructions on package, using baking mix and milk.

6Spoon biscuit mixture into cored apples, mounding slightly, and spreading to edges.

7Place on baking sheet and bake in preheated oven for 30 minutes, or until apples are done and biscuits golden brown.

8Any leftover dough can be shaped into biscuits and baked together with filled apples, for the same amount of time.

9For variety: A sprinkle of any of the following may be added to biscuit dough: sprinkle of raisins, currants, dried cranberries or chopped almonds;.

Hangover Cures

Almost all of us who drink will fight the beast that is the hangover at some point — some of us more often than not. A pounding headache, churning stomach, and extreme thirst are the last things we want to feel in the morning after a crazy night out, but many swear by their own cures as they stumble through life, weekend after weekend. From the basic (crackers and water) to the crazy (drinking even more), we’ve sifted through all kinds of “cures.” Most of what’s out there may be completely bogus, but these are the 15 greatest foods for when you’re hungover that will make a difference.




1. Breakfast Sandwich


The breakfast sandwich is a classic hangover food, whether your favorite is an egg McMuffin, a bacon, egg, and cheese biscuit or even something homemade. There’s little to no work on your part — this grease bomb will ease your suffering. It covers the carbs and protein needed to clear your head and get back to work.



2. Mac and Cheese

There’s nothing like the warmth of good comfort food, and macaroni and cheese really hits the spot when you’re hungover. It doesn’t matter if it’s from Kraft in a box or if it’s that recipe your mom sent you, macaroni and cheese is a great option. The noodles allow easy digestion and provide plenty of carbs, while the cheese gives a decent amount of protein to help your body repair all the damage you caused.




3. Pizza

Pizza is another classic hangover food for those that swear by the greasy cures. It’s also one of the few hangover foods that’s likely to already be on your table when you wake up. Carbs are in no short supply with pizza, though things like macaroni and cheese will give you more — but pepperoni will boost that protein and even add to the grease factor. Pizza is easy and cheap to come by — cue the stampede of college students — so we don’t see it losing its popularity amongst other hangover foods any time soon.



4. Pho

While pho (pronounced “fuh”) may not be the first thing that comes to mind when considering how to cure a miserable hangover, this Vietnamese noodle soup does wonders. The broth in pho is a constant, but there are many choices available on the meat front, though sliced rare beef and chicken are surefire, tasty choices. The winning key to pho is the broth though — it helps replace the salt and potassium your body loses by the boatload when you drink.



5. PBJ Sandwich

Yes, it’s a simple solution, but sometimes simple is all you need. This little sandwich is a concoction of some powerhouse hangover fighters — peanut butter for protein, bread for carbs, and jelly for sugars. It’s easy on the stomach, kind to the taste buds, and extremely quick to prepare. On whole wheat, it also has the “healthy” effect on your already guilty conscience.



6. Full English Breakfast

Enjoying a full English breakfast, if you have the time, is highly recommended when hungover (and even when you’re not). Breakfast sandwiches are a quick solution, but the full English breakfast will cover all your bases, and then some. A full English breakfast traditionally consists of: Bacon, eggs, fried or grilled tomatoes, fried mushrooms, fried bread or toast and sausages, black pudding, fried potato cakes, and is usually served with a mug of tea. Granted, this may not be the easiest thing to come by if you’re outside the UK and not in a big city elsewhere, but if it’s available it’s a good choice.



7. Bananas

Yes, really. Bananas are like nature’s own little hangover cures. Not only are bananas full of fructose (natural fruit sugar), to help with energy, they contain a nice amount of potassium. See, when you drink excessively, potassium is one of those minerals that gets depleted. Not only is bacon packed with proteins that break down into amino acids your body needs to recover, but the high amount of aminos contained aids in clearing your head altogether. So go ahead, make that bacon sandwich you’ve always dreamt of. It’s one case where it’s absolutely healthy to do so.



10. Bagel With Cream Cheese & Lox


A warm, toasted bagel is appealing enough to the severely hungover, but add cream cheese and lox — you’ve got a winning combo. The bagel clearly satisfies the need for carbs, but the cream cheese and lox (cured salmon fillet) give a vital protein boost. If you’re not into salmon, or if your stomach can’t handle the fishy smell, then simply leave it out — the cream cheese can hold it’s own.



11. Chinese Food

Tried and true, any kind of Chinese take-out is usually a favorite amongst boozers. Opening up a box of Chinese take-out would reveal anything from rice or noodles to a variety of chicken, beef, pork or shrimp in greasy glory. Both rice and noodles help kick start the metabolism into gear, speeding up the digestion of that evil alcohol, while chicken, beef, pork and shrimp all contain the protein any hungover body craves.



12. Biscuits and Gravy

Biscuits and gravy is another comfort food that serves as an amazing counterpart to a hangover. Again, carbs come to the rescue here — biscuits have a decent amount. The sausage gravy provides a tiny bit of protein, but loads on the fat that many find helpful in curing hangovers. It’s a heavy dish, so be wary if your stomach is feeling queasy.



13. Cheeseburger

Cheeseburgers are a common choice when asking for favorite hangover foods, but the McDonald’s Double Cheeseburger — and many other varieties — seem to win (just ask for a Drunk Special). Though the buns provide some carbs, we suspect that the greasiness (instead of the meat protein) is what does it for most people. They’re cheap and fast, so if you’re not queasy, a cheeseburger is the way to go.




14. Mexican Food

Mexican food can be anything from Taco Bell and frozen burritos, to real Mexican food, like fresh Chicken Mole or Menudo. The key with Mexican food is that it’s dense, sometimes greasy, and packed with protein and carbs. While Taco Bell and frozen burritos seem to be the safer choices, if you’d rather fight evil with a greater evil, Menudo (tripe soup) will do just the trick.




15. Water

Alright, so water isn’t exactly a food, but it is the thing you need when fighting a hangover. No matter what foods you choose to help combat your churning stomach and pounding head, water is still the ace in the hole. Drinking alcohol drains your body of all sorts of things, and that headache you’re feeling has a lot to do with a bad case of dehydration. So make it easier on yourself and drink water before you pass out, keep it next to your bed, and keep drinking it in the morning. If plain old water isn’t your thing, try some fortified water, like Vitamin Water or Gatorade. However you dress it up, the water is the key, so get drinking.

Worms in the Dirt

1. Prepare the Chocolate Pudding and pour into bowls.

2. Crush a batch of Oreo cookies inside a plastic zipper bag.

3. Add gummy worms to pudding and sprinkle the "dirt" Oreos over the top.

4. Chill the wormy dessert in the fridge and then enjoy these chocolaty, gummy treats.

German Apple Cake

3 eggs
2 cups sugar
1 cup vegetable oil
1 tsp vanilla extract
2 cups all-purpose flour (purpose)
2 tsps ground cinnamon
1 tsp baking soda
1/2 tsp salt
4 cups tart apples (peeled cored and chopped)
3/4 cup chopped pecans
frosting
8 ozs cream cheese (softened)
2 tsps softened butter
2 cups sugar


1In a large mixing bowl, beat the eggs, sugar, oil and vanilla. Combine the flour, cinnamon, baking soda and salt; add to egg mixture and mix well. Fold in apples and nuts. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake at 350 degrees F for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.


2In a small mixing bowl, beat cream cheese and butter. Add confectioners' sugar, beating until smooth. Spread over cake. Refrigerate leftovers.

Maple Glazed Breakfast Apple Tarts

Yum! This sounds sooo good!

8 ozs cream cheese (softened)
1/4 cup sugar
1 tsp vanilla
2 apples (empire gala or golden delicious)
1/4 cup granulated sugar

17 1/4 ozs puff pastry (frozen, thawed)
1 large eggs (beaten lightly with 1 tablespoon water)
1/2 cup maple syrup (pure)
1In a small bowl stir together cream cheese, confectioners' sugar, and vanilla until smooth.

2Peel, halve, and core apples and cut into 1/4-inch slices. In a bowl toss apples with 2 tablespoons granulated sugar.

3Preheat oven to 375°F.

4On a lightly floured surface roll 1 sheet puff pastry into a 15- by 11-inch rectangle. From a long side, cut four 1/3-inch-wide strips. From a short side, cut two 1/3-inch-wide strips. Set pastry strips aside. Halve lengthwise what remains of rectangle and put halves on a baking sheet.

5Just inside pastry rectangles' edges, brush 1/3-inch-wide borders of egg wash, reserving remaining egg wash. Arrange pastry strips on borders so that they are flush with edges of rectangles, trimming strips to fit. Spread cream-cheese mixture inside borders on rectangles and top with apples.

6On a lightly floured surface roll remaining puff-pastry sheet into a 14- by 10-inch rectangle and halve lengthwise. Cut several 2 1/2-inch diagonal slits down middle of each rectangle (do not cut within 1 inch of edges).

7Brush pastry borders of apple-topped tarts with some remaining egg wash and top each with 1 pastry rectangle. Press edges gently but firmly together to seal. Brush remaining egg wash over pastry tops and sprinkle with remaining 2 tablespoons sugar. Bake tarts in middle of oven 30 minutes, or until puffed and golden.

8In a small saucepan simmer maple syrup 10 minutes, or until reduced to about 1/3 cup. Brush hot syrup glaze over warm tarts. Serve tarts warm or at room temperature.

Easy Oatmeal Breakfast Recipes

Apple Cinnamon: Add chopped apple or a few teaspoons of natural, unsweetened applesauce to oatmeal and cook. Sprinkle with cinnamon.

Maple & Brown Sugar: Use sugar-free pancake syrup and a dash of cinnamon or artificial brown sugar replacement by Sugar Twin that is now available.

Fruit & Cream: Add a little milk or vanilla protein powder and a few strawberries, blueberries, peaches, or a teaspoon of sugar free preserves.

Butter Pecan: Add a splash of imitation butter flavor, teaspoon of Promise fat-free butter replacement or a few dashes of Butter Buds and a teaspoon of chopped pecans.

Other Grains: Try a multi-grain hot cereal, 5 or 7-grain hot cereal, oat bran, or get even fancier and splurge on some imported McCann Steel Cut Oatmeal for a little change of pace when you are bored with regular oatmeal. Any of the flavor varieties listed above work well with these complex carbohydrate hot cereals.
